As per the documentation, a virtual service will need to restart when assigning a new certificate for the first time:
When manually assigning a new certificate to a Virtual Service for the first time, the Virtual Service will restart so we recommend doing this outside of working hours.
But automatic renewals are seamless, and don't take down the virtual service:
Automatic renewal and updating of certificates is seamless and does not affect Virtual Service traffic.
When I manually assign a new certificate (or an updated certificate) to an existing virtual service, that already had an SSL certificate assigned, through the UI with the "Set Certificates" button, will this cause a Virtual Service restart as well?

Hello Matt,
Generally when making any configuration changes related to the SSL certificates, there may be some interruption of services, so we would recommend making these changes during off hours, or a maintenance period.
Best Regards,
